Ingredients and spices that need to be Take to make Mughlai Chicken Handi:

  1. For the Chicken Marination:
  2. 450 gms Zorabian Breast Boneless Chicken
  3. 1 tsp Black Pepper Powder
  4. to Taste Salt
  5. For the Gravy:
  6. 3 tbsp Oil
  7. 2 Onions (Finely Chopped)
  8. 2 tsp Ginger Garlic Paste
  9. 1/2 tsp Turmeric Powder
  10. 1 1/2 tsp Kashmiri Red Chilli Powder
  11. 2 tsp Coriander Powder
  12. 1/2 tsp Cumin Powder
  13. 2 Tomatoes (Purée)
  14. as required Cashew Paste (12 Cashewnuts soaked in 1/4 cup hot water and ground)
  15. 3 tbsp Yogurt (Whisked)
  16. 150 ml Water
  17. 3 Green Chillies (Slited)
  18. 1 tsp Chicken Masala
  19. 2 tsp Kasuri Methi (Dried Fenugreek Leaves)
  20. to Taste Salt
  21. 2 tbsp Coriander Leaves (For Garnish)

Instructions to make to make Mughlai Chicken Handi

  1. Cut the chicken into small bite sized pieces. Clean, wash and drain the boneless chicken pieces.
  2. Transfer the chicken pieces in a large mixing bowl. Add black pepper brown and salt. Mix well and set aside to marinate for about 30 minutes.
  3. Soak 12 cashewnuts in hot water for 10 minutes.
  4. Transfer the cashewnuts alongwith the water to a blender and blend to a smooth paste. Remove in a bowl and set aside.
  5. In the same blender, add the chopped tomatoes and blend to make tomato puree.
  6. Add roughly chopped onions to a chopper and chop it finely. Remove in a plate and set aside.
  7. Whisk curd and set aside. Keep the remaining ingredients ready.
  8. Heat oil in a large non-stick pan. Add the finely chopped onions and saute for 4 to 5 minutes on medium flame until onion changes color or till light golden brown in color.
  9. Add ginger garlic paste and saute for 2 minutes on low heat or until the raw smell leaves.
  10. Now add the marinated chicken pieces and fry them for 2 minutes over high heat. After that reduce the flame to medium and fry the chicken until almost done.
  11. Add turmeric powder, cumin powder, coriander powder and kashmiri red chilli powder and saute for 3 to 4 minutes on medium flame.
  12. Add the tomato puree and cook it for 3 to 4 minutes over medium flame until oil separates.
  13. Now add the cashew paste and mix it. Add the whisked yogurt and mix well. Cook for 2 minutes on low flame until oil separates.
  14. Add water and slited green chillies and mix it well. Cover and cook for 15 minutes on low flame until oil separates.
  15. After the set time, remove the lid and add chicken masala and dried fenugreek leaves. Mix it well and cook for 2 minutes on low flame.
  16. Garnish it with chopped coriander leaves.
  17. Restaurant Style Delicious Mughlai Chicken Handi is ready. Serve it hot with steamed rice, roti or any bread of your choice.
